Interview with Chef Mayank Istwal, Junior Sous chef at The LaLiT Udaipur.
What do you do at the Lalit?
I am the Junior Sous chef at The Lalit Udaipur. My job entails cooking for special guests and VIPs. I have been working here for past 6 months now. Before, I was working as a chef in Sydney.
What do you like most about your job?
I have always been passionate about cooking. My father had a catering business when I was growing up. I saw different chefs working in kitchen and was interested in that side of the business. When I was studying in Guwahati, I won a chef competition. I like that people appreciate my cooking and it is my favourite thing also. Guest interaction is one of the best part of the job too. Getting good feedback and appreciation of your cooking.
Udaipur specialty that one must try when visiting
Rajasthani thaali is a must try. Non vegetarian lamb sula or lal maas. If vegetarian gatta curry.
What is your favourite food dish?
Spaghetti Aglio e Olio with a BBQ rubbed Sirloin steak which I used to grill in Australia for myself.
What do you enjoy besides cooking?
I like music and am a part time DJ of House and electronic music.
